To be sure that you make the right choice, and more importantly to be sure that your avocados are ready when you are, you need to be sure that you pay attention to four key areas before you put it in the cart for purchase. They are color, texture and firmness. Generally you want a dark green/black skinned avocado, that has bumpy skin and is slightly soft when you are ready to use it. Keep in mind it takes about 3-4 days for an avocado to ripen, so if you are a few days out, then choose a brighter green, more firm and smooth skinned avocado.

INGREDIENTS YOU WILL NEED FOR AN AMAZING AVOCADO CHICKEN SALAD SANDWICH
- Avocado
- Mayonnaise
- Sour cream
- Worcestershire sauce
- Onion
- Garlic
- Cayenne pepper
- Individual wraps or croissants
- Walnuts
- Chicken: I usually used chopped meat from the rotisserie chicken. If you like your meat dark, feel free to use the thighs.
How to make an AVOCADO CHICKEN SALAD SANDWICH
Avocado chicken salad is such a simple and easy lunch or even brunch meal to make. The secret to making fast is preparing all your ingredients first because the minute you start cooking, your dinner is served in less than 15 minutes. So, here is what you need to do:
Take the dressing ingredients in a large mixing bowl (sour cream, cayenne pepper, chopped onion, garlic, and Worcestershire sauce) and blend until creamy.
In another large bowl, add the cooked, chopped chicken and the chopped walnuts. Mix until the ingredients are evenly distributed.
Pour creamy avocado dressing over the mixture and stir until well combined. Serve with or without lettuce in your favorite wrap or on a croissant for decadence.
How to store the leftover Avocado Chicken Salad?
Once done, transfer all the remaining salad into an airtight container, and place a plastic wrap over the salad to keep the avocados from changing color to brown. If the salad turns color, it does not mean it has gone bad, it simply means the avocado has been oxidized. While it may not be serving worthy, it still will taste good. Take it as a sign that you should enjoy the leftovers yourself!
Tips & Tricks:
Approximately 1.5 pounds of uncooked, boneless chicken breast will yield 3 cups of diced chicken.
To keep the avocado from browning, be sure to toss the diced avocado with a tablespoon of lemon juice.
