Creamy Blueberry French Toast, One Pan Of Amazing

Everyone likes to have a big breakfast for the holiday brunch gatherings or simply for a family breakfast home. This Creamy Blueberry French Toast is my go-to multiple times throughout the year, but it’s a definite staple every Christmas morning. Why? To keep it simple, it’s because this recipe is an easy one-pan bake that packs the most amazing flavor and leaves less cleanup and more time with family! The fresh blueberries are enhanced with maple syrup’s sweetness, layered with the sugared cream cheese with custard-soaked bread cubes and a hint of cinnamon!

Everyone is looking for easy one-pan recipes because, if we’re honest, no one wants to do more dishes than absolutely necessary! This Creamy Blueberry French Toast does not disappoint. A one-pan wonder, assembled in one baking pan, makes it dreamy on its own. The recipe comes together in just 15 minutes or so and packs a big flavor that will have your guests wanting more.

Another bonus is that this recipe can be a make-ahead recipe. This one-pan wonder can be made a day in advance, and it will actually improve the taste, in my opinion. This extra time really allows for the bread to soak up all of the wonderful flavors and frees up your time to do other items on your to-do list. It simply can not get better!

One of the reasons this recipe is on my holiday brunch menu is that I can put it in the oven while enjoying opening gifts. When we are ready for breakfast, this dish is ready to serve. Another one-pan favorite is my Baked Apple French Toast. I usually serve both to give the family options for breakfast. Both dishes are centered on fresh fruit and easy, pan, make-ahead, delicious creations!

  • Cream cheese softened
  • Sugar
  • Fresh blueberries
  • All-purpose flour
  • Cinnamon
  • Eggs
  • Milk
  • Maple syrup
  • Butter, melted

Let’s Get Started

If you are making this right away, start to heat your oven to 375 degrees. Then locate a 13 x 9 baking pan and spray with a cooking spray of your choice. 

Clean the fresh blueberries, remove any stems and discard any blueberries that are mushy or too ripe. Add the blueberries to a zip lock bag with a small amount of flour to coat the blueberries well and set them aside.

Grab the cream cheese in a small bowl and add the sugar and mix with a hand mixer until the mixture thins. Set aside. 

Grab your loaf of bread and cut the bread into slices and those slices into one-inch cubes until the entire loaf is cut into cubes.

Assemble the French Toast

Layer one-half of cubes of bread. Follow that up with a layer of fresh blueberries across the pan. Grab your sugared cream cheese and create small dollops of cream cheese evenly across the pan. Lastly, top the pan with the remaining amount of bread cubes.

Now for the custard…

Mixing the eggs, milk, cinnamon, and maple syrup in a bowl until well blended. Pour the mixture over the bread to soak completely. Use a spatula to press down the bread to ensure the milk mixture is soaked into the bread. No one wants a dry toasted piece of bread bite!

Off To The Oven…

Sprinkle with cinnamon, adding more if desired. You are going to cover the pan and bake for 40 minutes, and then uncover and bake for 5 minutes more. 

Tips & Tricks

  1. You can cook right away or measure aluminum foil, spray with cook spray, cover the baking pan, and refrigerate overnight for best results.
  2. Bread should be a fresh, unprocessed loaf. It can be day-old bread that will save you money and be a drier version and help soak up the custard.
  3. Be sure you take the time to cream your cream cheese with the sugar until sweet to the taste and thinned out. If you don’t, it will stay a big blob in the French Toast. Also, as a reminder, keep your dollops small and well placed. The goal is to get a hint of the sweetened cream cheese, not a mouthful in one bite.
  4. Cut your aluminum for the baking portion of the recipe and spray with your favorite cooking spray before placing it on the pan to eliminate any sticking.
