Marinated Grilled Vegetables-Flavor Bombs of Summer

Grilled vegetables are a classic side dish and a staple in many Italian, Greek and Middle Eastern recipes. They are flavorful, juicy and colorful. While you can easily find commercial marinated grilled vegetables in markets, the recipe for homemade version will be really fun to make and free of any chemical additives.

The last time I did a vegetable grilling recipe, my husband said, “These are so good that we should make them every time we grill.” Now that I’ve got the some great feedback from posting this recipe, I know he’s right!

Your favorite vegetables on hand. Bell peppers, mushrooms, carrots, zucchini, squash, asparagus, cauliflower etc..

Extra Virgin Olive Oil

Fresh Squeezed Lemon

Garlic

Blue Agave

Dried Basil

Dried Oregano

Dried Thyme

Dried Parsley

Chill Pepper Flakes

Fresh Parsley

Salt and Pepper

How to make Marinated Grilled Vegetables:

Preparing the vegetables

You can use anything you have on hand or is in season at the moment. Here I used mushroom’s, red bell pepper, yellow bell pepper, orange bell pepper, carrots, red onion and both yellow squash and zucchini. All of these are big favorites in our household and hold up to the marinade and grilling process perfectly.

After washing all of your vegetables, let’s get them prepped for the marinade. You want to clean them of any seeds, peel skins if necessary and cut them up. I prefer to cut the veggies into generous bite size pieces and grill them on a grill pan because they are so beautiful that way.

If I am only doing a single vegetable, I will then slice them in bigger slices so they will fit right on the grill. For instance, I would take the squash or zucchini and cut it lengthwise and lay the slices right on the grill. But as you can see below, this time I used a bunch of different vegetables and they are just grilling beautifully.

Preparing the marinade

The marinade is pretty straight forward. You are going to gather the ingredients’ fresh squeezed lemon juice, the extra virgin olive oil, blue agava, dried basil, parsley, thyme, oregano, salt, pepper and the chilli flakes. Take the ingredients and literally put them into a Ziplock bag for the vegetables to marinate in and your marinade is ready to go.

You want to get the Ziplock bag or bags depending on the volume of veggies you have to make for your group into the refrigerator so that marinade can do it’s magic. I have double the recipe many times and it is still so delicious!

Marinating the vegetables

There tends to be a wide variety of opinions when it come to the the topic of how long you should marinate the veggies. While you are free to take a look at Veggie Marinating 101 to read about the differences in the time you should marinate soft veggies over hard veggies like carrots, I can only share with you my experience with marinating these vegetables for 2-3 hours and they honestly come out perfect. I will share with you that I also make it a point to flip the Ziplock over every half hour in the refrigerator to be sure that they are all well coated.

Grilling the marinated vegetables to perfection

As I mentioned, I use grill pans designed for grilling vegetables on the grill. I put them on the grill on med-high heat to get the pans nice and hot. Then I pull the vegetables out of the marinade and put them into the pans and discard the remaining marinade.

As a flavor enhancer, when grilling the vegetables you want to periodically baste the vegetables with another flavor bomb combination of extra virgin oil, garlic, fresh parsley and salt and pepper (see recipe below). This ensures that the vegetables remain juicy and flavorful.

Now grill the vegetables until they are soft but still have some structure. No one wants to eat a veggie that is mushy. Be mindful of your heat of your grill and pull them off when you are confident that they are done.

Marinated Grilled Vegetables, Simple Perfection

These marinated grilled vegetables are my new favorites. I really really love them. They’ve got an awesome flavor and aren’t exactly boring with the usual vegetable marinades that you get. So if you’re a vegetable lover and like to barbeque, then this recipe is definitely one for you! Serve these marinated grilled vegetables with any protein and you will have a plate that has beautiful color, texture and flavor!! Truly, these marinated grilled vegetables are easy to make and taste delicious!
